Kale is a nutrition superstar due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable.
Do not be scared to microwave Kale, because it maintains its texture quite well, as well as its nutrients. I made a quick bowl starting with Ramen Express, and added a two cups of chopped kale and microwaved them at the same time for 3-minutes.

I cut a large gala apple into small pieces and added this to the bowl. I added slat and pepper, plus cayenne pepper to taste. I added a table spoon of honey, and microwaved for two-minutes. Then I added a little more chopped kale to taste the freshness of green vegetables. (that is my thing)
Lastly, I added a box of raisin for fun. Delicious, nutritious and quick.
